This was amazing! Beetroot quinoa 😍. I made some changes, I had mushrooms to use and cold sweet potato in my fridge so added that. And the fried egg in coconut oil, yum! I've had a long day of meetings, not enough nutritious food and not nearly enough water. So got home feeling tired, dehydrated and completely unmotivated. Honestly nearly went to bed without dinner. But this has been just what I needed and perked me up again!
