Hello! So far I have been really good with keeping to plan but I'm struggling with week 3, I'm a veggie and this week seems has a lot of meat and fish recipes, I like to try and stick to the meal plan and adjust it, this makes the weekly shop easier and quicker. What have/did all you other veggies do for this week for substitutes? I feel I need a little inspiration this week (I think all this can be blamed on PMT) 😏

Just thought, do you have Maddie's 'Get the Glow' book? There is a fab quinoa burger recipe in there which may be a good swap for the chicken burgers? 💕

Hi Zoe, I've been going off plan a bit but sticking to the same principles as otherwise it would be a bit repetitive (until the veggie plan comes out). I've made socca pizza (equal parts chickpea flour & water) with toppings like artichokes, tomato sauce, avo and rocket. Also made quite a few kale salads with tamari/tahini dressing and seeds and butterbeans in an oregano and tomato sauce with a poached egg and chilli. Going to try different quinoa salad variations this week too.
