Made some Courgette & Buckwheat Loaf as well as the Berry Chia Puds with thanks to our very own @Gemmans82 - super yummy and very easy to make! I'm sure she'll share the recipe if you would like. Maybe a treat when everyone's finished! 🌟🌟🌟

Ingredients: 100g Buckwheat Flour (I used wholemeal but sprouted also great), 50g Gluten-free oats, 1 minced garlic clove, 1x courgette, 2x eggs, 60ml Extra Virgin Olive Oil, 1/2 Gluten-free Bicarbonate of Soda, some fresh chives/basil/mint, sprinkle of seeds! I used pumpkin, sesame and sunflower. Can add pink salt if you like too.

Method: Mix dry ingredients, mix wet ingredients, then mix together! Squish into a greaseproof loaf tin and bake into a medium heated oven for 20-30mins until a cake tester comes out clean.

Spread almond butter over a warm slice for an extra treat! Or dip into a healthy vegetable soup.
