My adaptation of tonight's dinner, I decided to keep my chicken thighs while and roasted them with carrots and sweet potatoes, garlic, ginger, roasted tomatoes on a bed of steamed courgetti, broccoli and pak Choi. Healthy yummy dinner full of protein, carbs, fats, vitamins and minerals 😝
