For those who struggle to find time to make eggs for breakfast during the week...make an egg bake. Sauté the veg in a frying pan and place into a greased baking tin add the whisked eggs and bake in the oven on 180 (fan assisted) for 15-20 mins. You can also do this in a cupcake tray to make egg muffins - they last in the fridge for 3 - 5 days and can be eaten warm or cold.
